Brilliant pale lemon in colour. Very youthful citrus/honeydew aromas overlay
delicate mineral hints. Oak and malolactic characters are very much in the background, lees-ageing has made its usual creamy/almond contribution,
and subtle savoury aromas add further complexity. The palate is finely structured in a medium-bodied style. The fruit flavours tend towards
lemon and apple, supported by fresh, slightly racy acidity. Oak contributes almost subliminal flavours and a hint of structural firmness,
while the creaminess from yeast-lees contact provides a seamless texture. Promising length and complexity, combined with the wine’s great
freshness, suggest fine ageing potential.

Caledonia Australis Chardonnay
-
Bright, pale lemon-straw colour. Fruit aromas of lemon and honeydew are
supported by secondary characters of almond/cashew, contributed by extended yeast-lees contact, and a hint of fresh cream from low-level
malolactic fermentation. French oak fermentation and extended maturation contribute subtle elements of vanilla and spice. The vibrant
fruit flavours are balanced by those derived from winemaking input - grilled nuts, hints of toast and vanilla creme brulee. The palate
is smooth and subtle; warm alcohol and fresh acidity carry the flavours through to a long, even finish.

Bright, pale lemon-straw. Fruit aromas of quince and fresh fig combine with
cashew/hazelnut characters derived from extended yeast-lees contact, creamy hints from a small proportion of malolactic fermentation,
and subtle vanilla and toast from fermentation and maturation in 25% new French oak barrels. Long, smooth and textured, the palate balances
ripe fruit flavours with creamy lees-derived characters and supporting oak spiciness. The mid-palate is medium-bodied and finely structured,
leading to a well-defined finish marked by soft oak tannins and clean acidity.

Brilliant ruby colour, great depth. Juicy, ripe-berry aromas, perfectly balanced by
savoury/mineral characters, demonstrate the great potential of Leongatha Pinot Noir in an exceptional year such as 2007. At this stage, a
touch of new French oak is the only hint of winemaking influence in a wine so strongly expressive of its region and the 07 vintage. Rich,
ripe and supple, the palate displays bright berry fruit, a deliciously fleshy, juicy texture and great flavour persistence. Fresh acidity
and ripe tannins frame the mid-palate, which carries through to a long, complex finish.
